I did a 7-minute score on both, and on the second I felt emboldened to wedge a parchment paper ball behind the flap so the ghosts stood up more. I love the way that turned out, but the loaf itself is really flat. The first loaf is OK, so maybe a temperature issue (I didn’t let the Dutch oven “recharge” after the first loaf). I also didn’t get very much tension on one of the loaves during preshape—probably the one that turned out flat.
Who knew there were SO MANY things that could go wrong? I literally have no idea what’s going to happen until I pull it out of the oven. Exciting and infuriating 😂
PS: Upon further reflection the loaves may also be underproofed. Or possibly overproofed. Or maybe it’s shaping or temperature or all of those things. Sourdough is so frustrating lmao
